Brisket Is Done When It Probes Tender, Not When It Hits 205

A brisket can reach 205°F and still be tough. Use temperature as a checkpoint, then let tenderness decide when it comes off the smoker.

The most repeated brisket instruction is also the one most likely to ruin a cook: pull it at 205°F.

That number is useful. It is not a finish line.

Brisket is a large, irregular cut with two muscles, different amounts of fat, and plenty of variation from one piece to the next. A thermometer can tell you how far heat has traveled into the meat. It cannot tell you whether the connective tissue has softened enough for the texture you want.

Temperature gets you close

The USDA’s food-thermometer guidance says to measure a roast in its thickest part, away from bone, fat, and gristle. That is the right starting point for a brisket, but barbecue asks a second question after safety: is it tender?

Brisket is safe at a much lower temperature than the point where most people want to slice it. The higher finishing range is about converting a tough cut into something a fork or probe can move through easily. That conversion does not happen on an identical schedule in every brisket.

So use 195°F, 200°F, or 205°F as a reason to start checking. Do not use one of them as permission to stop without checking.

Probe the flat, not the easy part

The point has more internal fat and often becomes tender before the flat. If you probe the point, you can get a reassuring answer while the leaner flat still pulls apart like pot roast that needed another hour.

Start checking the thickest part of the flat. Push a thin probe or instant-read thermometer through the side, aiming for the center of the meat rather than a fat seam. Check a few nearby spots. You are looking for consistent, low resistance — closer to sliding into softened butter than pushing into a steak.

Do not turn the brisket into a pincushion. A few deliberate checks tell you more than repeated poking every ten minutes, and every lid opening costs heat and time.

What to do at the number

If the flat is still tight at 205°F, keep cooking. Check again after a short interval, and pay attention to whether the surface is drying out. Wrapping can reduce evaporative loss and move the cook along, but it also changes the bark; that is a tradeoff, not a repair button.

If the flat feels tender at 198°F, it may be ready. There is no prize for taking a tender brisket farther just to make the display show a familiar number. A smaller flat, a heavily trimmed brisket, or a cooker running differently from its dial can all reach the useful texture at a different temperature.

The number still matters for planning. It tells you when to begin checking and whether the cook is moving in the direction you expect. It just does not get the final vote.

Resting is part of the finish

The rest is not a magic number of hours. It is a chance for the carryover heat to ease off and for the juices to stop running as soon as the knife touches the meat. If you need to hold it for a meal, keep it hot with a method you can verify rather than leaving it on the counter.
